I had a request for the recipe for the Whole Wheat Hot Dog Buns that I made for the birthday party yesterday. Since I did make several changes to the original recipe from www.allrecipes.com, I agreed to print the recipe. Hope you enjoy it, too. Would make wonderful bread sticks!
WHOLE WHEAT HOT DOG BUNS
1 cup milk
1/2 cup water
1/4 cup butter
3 1/2 cups all-purpose flour
1 cup whole wheat flour
1 package active dry yeast
2 tbsp sugar
1 1/2 tsp salt
1. In a small bowl, heat milk, water, and butter until very warm, 110 degrees.
2. Sprinkle yeast over warm liquid ingredients. Let set to dissolve the yeast.
3. In a large bowl, mix 1 cup whole wheat flour, 1 cup all-purpose flour, sugar, and salt. Stir the liquid ingredients to mix the yeast into the mixture, then stir into the large bowl with the dry ingredients. Beat egg slightly, then stir into mixture in large bowl and beat until smooth and slightly stiff. Stir in the remaining all-purpose flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface. Knead until smooth and elastic, about 8 minutes.
3. Divide dough into 16 equal pieces. Shape each piece into a rectangle, approximately 3 inches by five inches. Starting with the long side, roll up tightly. Place seam side down on baking sheet. Let rise 20 to 25 minutes. Bake at 400 degrees for 10 to 12 minutes, or until light brown. Brush with melted butter as soon as removed from oven, if desired.
