Wednesday’s odds and ends

I founds some pictures on my computer from July of 2007, which is odd because I haven’t owned this computer that long.  And it is the only set of photos taken in 2007.  I can view them from Photo Gallery, and I can print them, but I can’t find them to show some of them to you.  There is an awesome shot of a four-‘o-clock that I applied the water-color filter to that I wanted to show you, but I can’t find it.  I did print it and put it in my photo album. 

Tried another amazing recipe today that will be a keeper.  It isn’t new so some of you may have tried it already.  I found a piece of folded notebook paper in my recipe box with a recipe for Philadelphia Strawberry Fields No-Bake Cheesecake.  I must have eaten it somewhere I ask for the recipe.  So as to avoid typing the recipe if I didn’t have to, I did a search, and sure enough, there is was on www.allrecipes.com.  I made one intentional change.  I put the strawberries in the blender and pulsed them briefly instead of mashing them with a fork.  (The blender was already dirty from crushing the graham crackers.)  Then when I opened the carton of Cool Whip which felt full but didn’t have a seal around the lid, I discovered I had a bowl of frozen sliced peaches!  I have no idea where those came from.  So I grabbed two partial cans of whipped cream, and used that instead.  I ate too much, but it is so good.  I’m usually not a big fan of un-baked cheesecake, but this one is an exception to the rule.  It would make a nice dessert for a gathering since it can be made ahead of time.  A few sliced strawberries and some mint leaves would really dress it up.

I didn’t sleep well last night, or the night before.  I sleep pretty good once I fall asleep, but I’m awake for hours.  Last night it was 10:00 before I got home from work, and it was still hours before I got to sleep.  Didn’t have much energy today.  Glad I didn’t have a lot that needed to be done. 

I found a picture in the archives from today two years ago.  We have had some foggy mornings recently, but nothing like this.

    Sorry about the not sleeping…I have gotten three good nights sleep in a row and feel so much better this morning…hope you got one too!

    • I’m not sure about listing more photos on Etsy. I’m thinking more along the line of picking out a series to put on note cards to sell on Etsy. I may send it to to iStock.

      The quality of the images on Etsy makes it hard for anyone to tell what they really look it.

    The cheesecake sounds delicious. I was never much of a fan until I married Mr and cheesecake is his favorite! Sounds like I will be learning to make one soon as one of my girls wants a cheesecake for her birthday cake. I have never had that request before!!!!

      Even homemade cheesecake that you have to bake isn’t hard to do. The secret is having the cream cheese at room temperature, and beating in the eggs one at a time.
